Fish Tacos
Serves 4
1 pound flaky white fish, orange roughy, halibut, cod, mahi or tilapia
1/4 cup canola oil
1 lime, juiced
1/2 tablespoon ancho chili powder
1/4 teaspoon chipotle powder
1/2 teaspoon chili powder
1/4 cup chopped fresh cilantro leaves
8 flour tortillas
Pre-heat grill to medium high heat or oven to 350 degrees. Place fish in medium size dish. Blend together oil, lime juice, spices and cilantro and pour over fish. Let marinate for 20 minutes. Remove
the fish from the marinade and place on a hot grill or bake in the oven until fish is done. Maybe 4-6 minutes per side on the grill or 10 to 15 minutes in the oven. Remove and let rest for five minutes
then flake with a fork. Heat tortillas for 20-30 seconds. Divide fish among the tortillas and garnish and serve.
CABBAGE SALSA:
1/2 medium size white cabbage, shredded
2 limes, juiced
2 mangoes, small diced
1 jalapeno, small diced
2 cups plain yogurt
2 tablespoons honey
2 tablespoons cilantro, minced
Salt and pepper to taste
Mix all ingredients together and let blend for at least an hour. Serve with above tacos.
GARNISH:
Thinly sliced red onion
Thinly sliced scallions
Diced tomatoes
Sour cream
Hot sauce
